“What’s Hot” Menu and
Beverage Trends NRA releases surveys of chefs and bartenders on what’s hot in food and beverage
Each year, the NRA prepares a forecast of “What’s Hot” in menu trends for the coming year, surveying more than 1,800 professional chefs to see the top priorities in foodservice. Children’s nutrition and local sourcing will continue to be the hottest trends on restaurant menus in 2013.
New this year, the NRA also surveyed nearly 200 professional bartenders to reveal the hottest trends for drink menus in 2013. Next year’s top trends in beverages will include barrel-aged drinks, food-liquor pairings and culinary cocktails.
